We live in Southern California minutes from the ocean and we rarely go! We decided we are going to start taking advantage of this beautiful landscape a lot more often, I mean how fun will it be pitch an umbrella, have a picnic and just play! The greatest part of this blog is creating a little story for Vivi and being able to show her these moments years later. My husband and I grew up in the Midwest, it was great for so many reasons. Vivienne on the other hand will have such a different upbringing I mean who gets to go to the beach all year round, wear shorts in December, lobster dive in October! I love California for these reasons and so many more!

While I was eating the Banana bread I made yesterday I was thinking how delicious it would be as a bread for French toast!... So, today I had to try it and let me tell you it was AMAZING!... I wanted to make it a little fruity so I made an easy blueberry compote to drizzle on top, plus I cooked some bananas in honey for a little added sweetness!... You have to try it because I am pretty proud of myself for thinking up this little treat! Ingredients: Banana bread- (sliced about 1/2 in -3/4 in thick) 2 eggs 2 Tbsp almond milk or coconut milk 1 tsp vanilla 1/2 tsp cinnamon For banana toppings: put sliced bananas in pan and drizzle honey.. Flip each slice till a little brown and caramelized. For blueberry compote: mix a 1/2 cup of blueberries with a 1/2 cup of maple syrup. Simmer till blueberries get soft. Directions: 1. Whisk eggs and add in vanilla and cinnamon. 2. Dip and coat each slice with egg mixture. 3. Fry in grape seed oil or coconut oil till lightly brown. 4. Take out and serve. 5. Top with blueberries and bananas.

I LOVE Banana bread ... It has such a great flavor and this Paleo Banana bread is no exception! It's not too sweet, it's just... well...Perfect!!!! Ingredients: 4 eggs 2 medium sized riped bananas 2 cups brown rice flour 1 tsp baking soda 1/2 cup applesauce 1/3 cup coconut oil 1/2 tsp salt 1 tsp vanilla *If you want you it sweeter you can add 1 cup of coconut sugar. Directions: 1. Preheat oven to 350°. 2. Put eggs in mixer and beat lightly. 3. To the egg mixture add applesauce, coconut oil, vanilla and if you are adding the coconut sugar do so at this point. 4. Combine flour, baking soda and salt. 5. Add flour mixture to the wet ingredients. Combine till thoroughly mixed. 6. Pour batter into bread loaf pan. I use the Williams Sonoma gold touch loaf pan so I never oil it but if you are using a regular loaf pan I would use a little coconut oil to lightly grease. 7. Bake for 45-50 min, let cool.
